I have another suggestion, but I don't think changing the axles wheels will have the added benefit you are looking for. Moving from 5200lb axles to 7000lb or 8000lb and heavier duty leaf springs will actually cause a rougher ride due to springs being stiffer than needed for the weight of your 2019 Forest River Sabre 32dpt. Your B&W # BWRVK3270 5th-Wheel hitch has a footprint measuring, 31-3/4" wide x 33-1/2" deep. You could use the Reese # RP30055 hitch cover that only covers the head of the hitch, or the Classic Accessories # CA80116 hitch cover that measures 24" x 24" x 18" which would cover most of your hitch.

Usually it's best to go with the leaf spring capacity that matches the axle capacity but if you are sure you'll be a lot under that I would shoot for a little over what it will weigh at max. So if you're going to be at 3,000 lbs max I would shoot for just a little over that like with the 4k springs part # e57SR that you referenced. This wouldn't be too stiff or too soft and would provide you with as good of a ride quality as you can get from trailer suspension.
